A Friend of a Friend

Charlotte is a friend of a friend of mine.

Her and her father had come to American Samoa for a visit.  I was able to have Charlotte over a couple days.  She is a remarkable your woman with a lot of energy and she fit right in with the boys.  The first day afternoon we went swimming at the pool.  They all had fun and Charlotte and Micah took turns doing dives, back flips and jumps into the pool

Skyler, of course, had to tease Riley.  Look at that face!

The next day was a hike to the canons.  This is always a great hike.

We finally ended up on the shore of Gaitaivai beach.  Here Charlotte and the boys ran from the on coming waves.  It was funny watching them chase the waves then the waves chase them.

Best wishes to Charlotte as she returns home.

Kayaking

Rain or shine it is Kayak time!   The boys had fun with Jason in the Paala Lagoon.  It was windy and cold but that didn't stop each one from taking a turn either paddling or riding.

Of course with only two kayaks there was some waiting around but these boys found a way to keep busy by finding crabs.

Mug Cakes

Look what we did today!

The boys and I had a spur of the moment project with the boys.  We tried to make mug cakes.  We experimented a couple times and then I let the boys go to it!

It was a fun and easy project and the outcome was delicious!!!   Yum!   Here are the recipes we used that I found on Facebook.  I altered the chocolate to our taste.

Vanilla Cake:
2 Tbsp. melter butter and 1 large egg whisked together in the mug.
Add 2 Tbsp. milk and 1/4 C sugar and mix well.
Add 6 Tbsp self rising flour and a pinch of salt.  Mix until smooth.
(We added a bit of vanilla extract and chocolate chips as desired)
Put mug in the microwave and microwave for 3 minutes.

Chocolate Cake:
4 Tbsp of self rising flour, 3 Tbsp of sugar and 1Tbsp of cocoa powder mixed well.
Add 3 Tbsp of milk , 3 Tbsp of vegetable oil, 1 large egg and 1/2 tsp vanilla extract.  Mix well and add 1 Tbsp. chocolate chips.
Put mug in microwave and microwave for 3 minutes.

Decorate as desired!

Eat up!  The boys loved eating these as much as making them.  The question today was.... "Can we do this again tomorrow?"  :)
